Roasted Sesame Cold Noodle Chicken Salad

Serves 8 (as a side dish)

INGREDIENTS:

1 pack Soba Noodles
1/2 Standard Market Deli BBQ chicken,
shredded 1 carrot,
julienned 3 baby capsicum,
julienned 1 bunch baby asparagus,
blanched 3 sprigs shallots,
sliced 1 cup nuts,
loosely crushed (peanuts, almonds or cashews)
1 cup coriander, torn
2 tablespoons sesame oil
1 cup Japanese roasted sesame salad dressing
1/2 lime, squeezed
1/4 cup sesame seeds
extra coriander to garnish sushi ginger to garnish

METHOD

Prep all the fresh ingredients ready to assemble the salad

Prep your soba noodles by adding to boiling water for 3 minutes, drain and rinse under cold water

Add your noodles to a large salad serving bowl…

Once that BBQ chicken is shredded, it is time to start layering up this delicious salad.

Add all the fresh ingredients and chicken to the noodles, then add your sesame oil, lime and dressing. Mix well so the dressing is evenly coated through the noodles. Stir through the nuts.

Top with sesame seeds and pickled ginger.
